Well, we came home grand plans for the CSA bounty of the week. On the menu was an Epicurious inspired spinach and potato salad with bacon vinagrette dressing. We rushed home for the lovliness that is bacon and greens. ALAS, WE HAD IMAGINED THE BACON IN THE FREEZER. Okay, shake it off. We have to use the greens. What to do? What to do? Okay, we're not shaken. Epicurious, daddy needs a new pair of shoes. As I walked around the kitchen eating pita chips, hummus, and kettle corn, lamenting the loss of bacon and the seemingly never-arriving dinner-time, Liz (as always) worked it out. Whew. Well, here is. I'll let Liz give you the lowdown. All I'm saying is that I ate radishes for the first time and have really enjoyed my salad. Liz, go!

The salad was magical. Despite feeling like I'm missing an arm due to being inexplicably and desperately out of black pepper of all descriptions (not to mention bacon), we managed to combine:
Fresh Spinach (Angelic Organics CSA Week 1!)
Fresh Basil Chiffonade (Ditto)
Garlic Scapes (Ditto - we don't really know what this is, but it is tasty.)
Fresh Red Ripe Jalapenos (HOT! - Visser's Farm, Holland, MI Farm Market)
White Radishes (Ditto)
Red Onion Slices (Conventional)
Calamata Olives (Imported Conventional)
Smoked Whitefish (Capt Chubs, Holland, MI Farm Market)
I dressed the above with a drizzle of basil flavor olive oil, a squeeze of fresh lemon, a sprinkle of peruvian sea salt chunks, and the smashed remains of the the three peppercorns left in the bottom of the grinder. It was salty, lovely, fresh, crisp, and occasionally super hot!
For sides we enjoyed a slice of sourdough bread with crushed red pepper and sea salt (Great Bread Co, Holland, MI Farm Market) and Leyden Cheese (Grassfields LLC, Holland, MI Farm Market), a raw milk cheese with caraway seeds.
Who needs bacon!?!? YUM!
